Chicken Salad with Poppy Seed Dressing

I absolutely LOVE this dressing for any type of green salad. It is nice and sweet packed with flavor. Every time I share this dish, someone wants the recipe.


CHICKEN SALAD

4 chicken breasts, seasoned with salt and pepper

1 head of romaine, green/red leaf, or spinach lettuce

1/2 red onion, sliced

1 1/2 cups grated mozzarella cheese

1 (8oz) pkg. sliced mushrooms (optional)

1 package bacon (cooked and crumbled)

2 large tomatoes, diced

1 small packed sliced almonds, toasted

I like to broil the chicken in my broiler but you can pan fry it until all the way cooked. Keep warm in a low temp. oven. Arrange lettuce in a large bowl, adding all toppings. Toss with poppyseed dressing (below). Slice chicken breasts and place on top . Serve immediately.


POPPY SEED DRESSING

1/3 cup sugar

1/2 tsp salt

2 tsp grated onion (or 1 tsp onion powder)

1/2 tsp dry ground mustard

2 TBSP red wine vinegar

1/2 cup canola oil

1/2 tsp poppy seeds

Mix the 1st 5 ingredients together in a bowl. Add oil slowly, a little at a time, whisking after each addition. Stir in poppy seeds when mixture has become thick.
